Say that five times fast you’re a winner! We’re entering fall and in addition to having pumpkin spice goodies to look forward to, many delicious fruits and vegetables are in their prime. Here are five favorites to inspire a little variety for your dinner plate. We’d love to hear what you look forward to in the comments below!
These mini cabbages are king. They looked like punishment as a child, but in the last decade they've become the nerdy girl who took off her glasses and turned into homecoming queen.
Versatility is one of their most impressive traits. They’re delicious steamed soft, blackened crisp, or served raw in a chopped salad. Go spicy by adding cayenne pepper and spiced garlic. Throw in some shaved almonds and cranberries for a burst of flavor. They’re an excellent source of vitamin C and K and have a decent amount of fiber. With a thicker texture than most green vegetables, they’re quite filling making these a popular favorite.
Grapes are hard to beat. They’re good for your heart, containing polyphenols and phenolic acids, so toss them up and catch them in your mouth without guilt. Try putting some in the freezer for a cool treat. I know people who use them to chill their white wine! Consider making your own grape jelly during this time so you can enjoy them year round.
“An apple a day” might be an old saying but it certainly holds true. They're the 2nd most powerful antioxidant with a good amount of dietary fiber. Think twice before you peel the skin though, that part contains half the fiber and many of its vitamins. According to SuperFoodsRx, “regular consumption of apples is linked to a significant reduction in the risk of developing type II diabetes, cardiovascular disease, asthma, and some cancers.”
Enjoy apples on the go with peanut butter or cheese sticks. If you let them sit for too long, not a problem. Reincarnate them into a pie, cobbler, or make your own applesauce.
You can do a lot with these but in my humble opinion, it would be like putting a hat on a hat. Dates are nature’s candy and don’t need a thing. They’re high in fiber and potassium so when your sweet tooth comes out, turn to these instead of a candy bar with empty calories. Go easy though, there’s about 16 grams of sugar per date so you shouldn’t need many.
* Don’t use dates in smoothies unless your blender specifically approves them. Their thick, sticky texture has been known to damage blades.
Low in calories, rich in vitamin C and A, this super veggie can be prepared a variety of ways. Mash it like potatoes, sauté it, bake it, or roast it - it’s an easy dish to make. Also said to prevent cancer with antioxidants and beta-carotene, there’s no reason not to take advantage of this wonder veggie.
